Rocky Road Cake in Se7en Steps…

This is a very impressive looking cake, it certainly has the WOW factor!!! Years ago I saw a photo of it in a Value Magazine, before it was Ideas Magazine, and I had to try it because it looked like such a fun cake. I don’t make this cake too often, it requires a bit more effort than my usual bang everything in and bake it style. However, it is worth the extra effort of sprinkling on a few toppings. It is so worth it. This is what you are aiming for:

Let’s meet the Players:

Se7en players:

125 g (4.41 ounces) butter
125 g (4.41 ounces) castor sugar
2 large eggs
30 ml (1.01 fluid ounces) syrup
270 g (9.52 ounces) self raising flour
150 ml (5.07 fluid ounces) evaporated milk
30 ml (1.01 fluid ounces) cocoa

3 Toppings:

50 g (1.76 ounces) pecan nuts (chopped)
100 g (3.53 ounces) marshmallows (chopped)
100 g (3.53 ounces) melted milk chocolate

Lets Play the Game:

Step 1: Cream the butter and sugar together.

Step 2: Add eggs.

And add the syrup. Hint: If you have to add syrup to a recipe then use a metal spoon that you have warmed in hot water first. The syrup will slide straight off.

Step 3: Put two Tablespoons of evaporated milk into a cup on the side for Step 5. Now, fold in the flour and the rest of the evaporated milk.

Step 4: I always get quite a stiff dough… but go with it, that’s right! Divide the dough in half. Place spoonfuls of the plain dough into the baking pan (use one large or two smalls pans), and leave airy gaps for step 5 – I always use spring form pans and you will see why… trying to extricate this cake and its toppings right at the end is just too challenging from a regular pan.

Step 5: Take the remaining two tablespoons of evaporated milk and the cocoa, combine together. I usually warm it slightly in the microwave so that it is smooth. Mix the smooth cocoa mixture into the remaining mixture.

Then spoon it into the gaps in your pans for a marbled effect.

Step 6: Bake in the oven at 180 degrees Celsius (356 degrees Fahrenheit), for about half an hour… you have to watch it, it gets done quickly! Remove from the oven and sprinkle the nuts and marshmallows over the top… Place back into the oven for about five minutes…

Until the marshmallows have melted – oh yum!!! But you are not done!

Step 7: Let your cake cool and remove from pan. Then drizzle the melted chocolate all over the top .

Oh! Yes! Now you are Done!!!

And it does look impressive!!!
