There is nothing that beats the yummy lemony taste of Lemon Curd, which is basically a lemon flavored custard. You can store it in the fridge for weeks and you can add it to anything that needs a bit of bite. It is great straight on a piece of toast, on scones, swirled in muffin mix, as a pancake topping, between cake layers, to make lemon meringue pie, I could go on but I’ll stop!!! Well you could also gift this – it makes a brilliant gift if you are going out to a meal at friends and they say “Don’t bring anything!” Okay – I will stop, lets get onto the recipe:
Let’s Meet The Players:
- 4 lemons
- 1/2 cup butter
- 1 cup sugar
- 4 eggs
Let’s Play the Game:
Step 1: Use a glass bowl that fits over a pot. Zest your lemons…
Step 2: Juice your lemons…
Step 3: Pop the glass bowl over a pot of warm water. Keep the water simmering and add the butter and sugar to your lemon juice.
Step 4: Stir the ingredients in the bowl until they have melted.
Step 5: Whisk those eggs together and pour them into the melted mixture.
Step 6: And stir and stir and stir… until it thickens and covers the spoon.
Step 7: And you are done… Pop it into a sterile jar and it can be kept fresh in the fridge for up to three months.
So there you go, get curd-ing! If you keep a jar of this in your fridge you will thank me! In fact it is so quick and easy to make you should just have a jar in there all the time.
