I made the gravest error of surfing through Jamie’s online recipe collection. I am not sure how it happened… I just ended up there and then well I just kind of fell into the chocolate recipe’s which led to this great discovery: chocolate biscuits with soft chocolate centers. So we tried them ourselves and trust me this is what you are aiming for: a little bit of chocolate heaven!!!

Let’s Meet The Players:

- 140g butter
- 140g castor sugar
- 2 egg yolks
- 250g self raising flour – we didn’t have any, so we used plain flour with a teaspoon of baking powder.
- 30g of good quality chocolate, whenever a recipe calls for cocoa I use the best purest chocolate we have in the house.
- Plain white chocolate – enough lumps of chocolate for each of the cookies we had about nine big cookies in a batch.
Let’s Play The Game:
Step 1: Melt your dark chocolate, it needs about a minute in the microwave… watch it all the time… once it is melted leave it to cool.
Step 2: Cream the butter and sugar together.
Step 3: Add your egg yolks and mix away.
Step 4: Add in the flour and baking powder, mix a bit more.
Step 5: Add in the coco and mix again. You will have a yummy chocolate dough.
Step 6: Roll your dough out on a floured surface. Choose two glasses of slightly different sizes or use cookie cutters if you have them. Cut out enough cookies to fit your greased tray using the bigger glass. Lay them on the tray and pop a block or two of chocolate on top.
Then re-roll the dough scraps and cut out tops for each cookie using the smaller glass.
Pinch your cookies closed – I got a lot of help at this stage!
Step 7: Pop them in the oven at 190 degrees Celsius for about 10 minutes. and while they are in the oven just start on the next batch – trust me on this!!! Let them cool on the tray… We sprinkled ours with icing sugar.
We ate ours warm (couldn’t wait), while the chocolate in the center was melted and gooey!!!
