Rock Buns in Se7en Steps…

It’s that time of year when everyone is doing Christmassy things and I have a whole heap of hoods who need to be chilling out and swimming. I seriously need some quick baking. And these cookies are quick! Literally toss the ingredients together, spoon them onto the tray and bake them. This is what you are aiming for:

Let’s Meet The Players:

And let me just say that I have noticed, when it comes to posting and when it is far too late to go back and re-photograph things, that I have left a crucial ingredient out of every “ingredient” photograph since Hood 7+1 was born. So just treat the photo as a little bit of a puzzle, a stretch of the brain, spot the difference, whatever… and here are the players, really:

  • 2 cups of flour
  • 3 teaspoons of baking powder
  • pinch of salt
  • 1 teaspoon of mixed spice
  • 1/2 a cup of butter
  • 1 and a 1/2 cups of fruit cake mix
  • 2 Tablespoons of glace cherries and we chose red and green ones for Christmas.
  • 1/2 a cup of sugar
  • 1 beaten egg
  • 2 Tablespoons of milk

Let’s Play The Game:

Step 1: In a large bowl place the flour, baking powder, salt and mixed spice.

Step 2: Chop the butter up and place it in the dry ingredients. Rub your mixture until you have breadcrumbs.

Step 3: Add in the fruit cake mix. Chop the cherries and add them as well.

Step 4: Add in the sugar.

Step 5: Beat the egg and add it to the mixture. Add the milk in at the same time.

Step 6: Mix away. And then place spoonfuls of mixture onto the baking tray – one can roll them, but we like the rough, chunky look.

Step 7: Bake at 200 degrees Celcius (400 degrees Fahrenheit) until they start to brown, about 15 minutes.
